Orange Chocolate Bread

Hello friends and blog readers!

Many of you have asked if you could have the recipe for the Orange Chocolate Bread that we made for Christmas. So, I thought rather than emailing it all to you seperately I would post it on here for anyone who wanted it. I made a couple of subsitutions to the original and have written it out exactly as I made it. Enjoy!!

ORANGE CHOCOLATE BREAD – makes 16 servings

1 medium navel orange

2 cups whole wheat flour

1 cup raw sugar

1 tsp. baking powder

.5 tsp. salt

.5 tsp. baking soda

1 egg

2 Tbsp. canola oil

2 Tbsp. unsweetened applesauce

1 tsp. vanilla extract

1 cup semi sweet chocolate chips

Wash and grate the orange. Put all the orange zest into the bottom of a liquid measuring cup. Juice the entire orange over top of the zest. Add enough boiling water to the zest and juice mixture to make 1 cup. Let stand for 10 minutes.

Meanwhile, in a large bowl combine the flour, sugar, baking powder, baking soda, & salt. Mix well. Stir in chocolate chips. In another smaller bowl beat egg, oil, applesauce, and vanilla. Stir in liquid orange mixture, stir until well mixed. Pour wet ingredients into dry ingredients and stir until just moistened. Pour into a greased 8x4x2 inch loaf pan. (or as I did, 3- 14oz. tin cans washed and greased with cooking spray) Bake at 350 degrees for 45-55 minutes, or until a toothpick comes out clean. Cool for 10minutes, move to wire rack to cool the rest of the way.
